- 1 avocado
- 1 c. sour cream
- 1 c. cold water
- 3/4 c. salsa verde
- 1/4 c. packed fresh cilantro leaves
- 1/2 tsp. salt
- 1/2 tsp. pepper Roasted salted pumpkin seeds

- In blender, puree avocado, sour cream, water, salsa verde, 1/4 cup packed fresh cilantro leaves, salt, and pepper until smooth.
- Cover; refrigerate until cold. Divide among 4 bowls; sprinkle with roasted, salted pumpkin seeds and cilantro.
