Asiago Mashed Cauliflower

Ingredients

  • 1 medium head cauliflower, cut into 1-inch pieces
  • 1 teaspoon sea salt, divided
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded Asiago cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons coarsely chopped fresh parsley
  • 1/4 teaspoon pepper

Directions

  • Place cauliflower and 1/2 teaspoon sea salt in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until very tender, 12-15 minutes. Drain; cool slightly.
  • Transfer to a food processor. Add the cream cheese, Asiago cheese, butter, parsley, pepper and remaining sea salt. Process until blended.

When the time comes that you reflect over your life and things you’ve done

Will you see someone smart or someone dumb?

Those things you thought were fun,

The things that you swore hurt noone.

Were they worth it?

Were they proper or were they like that of a nitwhit?

Are the ones that stood with you now standing apart?

You already know the answer because it is deep in your heart.

Time can’t erase certain deeds, certain paths you chose, the things left undone,

You can’t blame that on anyone.

Certain people let you down, you say

I’m certain they would not see it that way!

Noone controls your spontaneous combustion,

It is certainly your life not theirs, that needs constant adjustment.

Go ahead smell all those “roses”,

Hang around all those that constantly poses,

But when that gets old or you find some other venue

Maybe you will see what you’ve put those that love you through.

It’s hard to be happy when you’re playing catch up all the time

Trust me, I’ve seen that with friends of mine.

Think before you act

Always leave things in tact.

Don’t refuse to pay back, to anyone who’s lended you a hand

Take the praise and the reprimand.

Swallow your pride,

Keep your mouth closed from the inside.

Listen to reason,

Be willing to change wrong things just like the months change the season.

As I rise my mind sorts through

All the things of this new day I must do.

No rest, even though I am tired

No forgetting of troubles, I know, I have tried.

So much before me still left unfinished

The need to get them done has not diminished.

My body’s issues and pains

Make me feel like a dog that’s chained.

I wish for peace down in my soul

A place of safety few will ever know.

With the light of a new day I can attempt again,

I hope that I find this before my end.

I will keep trying, doing things over and over till it is there.

One minute, one day at a time, even if it takes a whole year.
