Pumpkin Pie Pudding/Recipe Share

Ingredients
1 can (15 ounces) solid-pack pumpkin
1 can (12 ounces) evaporated milk
3/4 cup sugar
1/2 cup biscuit/baking mix
2 large eggs, beaten
2 tablespoons butter, melted
2-1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract
Sweetened whipped cream or vanilla ice cream, optional
Directions
Combine first eight ingredients. Transfer to a greased 3-qt. slow cooker.
Cook, covered, on low until a thermometer reads 160°, 6-7 hours. If desired, serve with whipped cream.

McDonald’s is overhauling its Happy Meals to make the kids’ menu healthier.

McDonald’s is making Happy Meals healthier.

By 2022, cheeseburgers won’t be part of the menu for the kids’ meals, although parents can still ask for them. The main choices will be hamburgers and four- and six-piece Chicken McNuggets. And the French fry sizes will be smaller.

Bottled water will be added to Happy Meals later this year, and chocolate milk will come with less sugar. McDonald’s also pledged to serve more fruits, vegetables and grains.

All Happy Meals in the United States will have 600 calories or less by June, and at least half of stores and drive-throughs around the world will meet that target by 2022. McDonald’s says the calorie count in an average Happy Meal will come down 20%.

The company also said Thursday it will “reinforce responsible marketing to children,” in a statement Thursday.

The American Heart Association called the move an “important step in the right direction” and urged McDonald’s competitors to follow suit. The organization said 40% of young children eat fast food every day.

McDonald’s has been tinkering with Happy Meals for several years in response to pressure from public health groups, and to lawsuits for using toys to market to kids.

In 2011, McDonald’s added apple slices to Happy Meals. Soda came off the menu in 2013. And last year, McDonald’s replaced Minute Maid apple juice with its lower-sugar Honest Kids brand juice.

It’s also experimenting around the globe with new Happy Meal items. Last month, McDonald’s rolled out a grilled chicken sandwich in Italy, and locations in Australia and France are exploring vegetable and protein options.

Shepherds Pie, Low Fat/ recipe share

Ingredients:

For the Topping:

1 recipe of Cauliflower Mash (recipe below)

For the Pie Filling:

1/2 can sliced carrots

1/2 can green beans

2 tbsp butter

1 onion, chopped

1 pound lean ground beef

3 tablespoons almond flour

3 tablespoon tomato paste

3/4 cup water

1/2 tsp garlic salt

1/4 tsp black pepper

1 package dry gravy mix, low carb

1 tablespoon Worcestershire

1/2 cup shredded Cheddar cheese, to top casserole with

Directions:

Make recipe of Cauliflower Mash (recipe below) and set aside.

Preheat oven to 375 degrees.

Heat butter in a large frying pan. Add onion and beef cook until well browned, then stir in almond flour and cook 1 minute. Add tomato paste, water, seasoning and Worcestershire sauce. Bring to a boil, reduce heat and simmer for 5 minutes. Add gravy mix and let cook for 5 min.

Spread the ground beef in an even layer on the bottom of a greased 2-quart casserole dish. Next, spread a layer of carrots; then sprinkle cooked green beans over the carrots. Top with the Cauliflower Mash mixture and sprinkle with shredded cheese. Bake in the preheated oven for 20 minutes, or until golden brown.

Cauliflower Mash (to top Shepherd’s Pie)

1 large head of cauliflower, chopped into small pieces

1 cup chicken stock

1/4 teaspoon garlic powder

1/2 teaspoon salt, or to taste

1/2 teaspoon freshly ground black pepper, or to taste

1/4 cup cream or half-n-half

4 oz cream cheese

Place cauliflower and chicken stock in a medium sized saucepan. Cover and bring to a simmer of medium-high heat and cook until completely tender (about 10-15 minutes). Most of the chicken stock cooks down while the cauliflower cooks. Add garlic powder, cream cheese, salt and pepper, to taste; stir in cream and puree with a blender until completely smooth (or use a food processor)

SHORT STORY

Laura thought her Uncle was so very boring and odd. He wore a robe while working. He also wore a strange suit with a white-collar while he was not at work. The many times she visited with him, all she had to do was look at his books, he had lots of books,on lots of bookshelves. He also had small statues on his desk and end tables. She would sit sometimes and study them as if to know the stories behind them. One particular statue was of a man from way back a long time ago. She knew this because he had old clothes, some like she saw once in her Uncle’s books.

She knew her Uncle was a priest but she was not sure just what that meant. She knew he would say prayers over people and carry a necklace thing with a cross on it. She thought that was silly but she never asked him any questions. She had been taught not to. Her parents were real “sticklers” about that. She knew what the old saying, “Children should be seen and not heard”, meant.

Once she found a dusty case, at her Uncle’s place. She dusted it off and opened it up to see what lay inside. It was  a violin. Her curiousity was really getting to her, so she decided to ask her Uncle about it. Although she knew it was wrong and really did not want to disobey, but…

So she went to her Uncle and placed the dusty case with the violin in it down on the end table at her Uncle. He smiled a rather oddly at her and asked her where she found that old thing. She explained it was in one of the rooms and she was very curious about it. He went on to explain that before he became a priest he was a well-known violinist. He told her s few stories of his time being a violinist and she eagerly sat and listened to those stories, each and every one. As her Uncle finished talking he asked her to keep his violin safe for him and told her to keep it for him. She smiled one of the biggest grins she could and said to him, “Alright, I will”.

Later that evening she gave thought to her Uncle, as she looked down at his violin and she smiled. She knew she had misjudged her Uncle after all. He was not boring and strange, he was a man of many talents. He was now, in her mind, the best Uncle ever.

Just goes to show you, not everyone can be judged by their outer appearance.

Don’t Stand So Close to Me” is a hit song by the British rock band the Police, released in September 1980 as the lead single from their third album Zenyatta Mondatta. It concerns a schoolgirl’s crush on her teacher which leads to an affair, which in turn is discovered.

The band’s third number one on the UK Singles Chart, it was also the best selling single of 1980 in the UK. The song also charted in the top ten in Australia, Canada and the US. The Police won the 1982 Grammy Award for Best Rock Performance by a Duo or Group with Vocal for this song.
