Chicken Chili with Black Beans/ Recipe Share

Chicken Chili with Black Beans

Ingredients

  • 3 whole boneless skinless chicken breasts (1-3/4 pounds), cubed
  • 2 medium sweet red peppers, chopped
  • 1 large onion, chopped
  • 3 tablespoons olive oil
  • 1 can (4 ounces) chopped green chilies
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 can (28 ounces) Italian stewed tomatoes, cut up
  • 1 cup chicken broth or beer
  • 1/2 to 1 cup water

Directions

  • In a Dutch oven, saute the chicken, red peppers and onion in oil for 5 minutes or until chicken is no longer pink. Add the green chilies, garlic, chili powder, cumin and coriander; cook 1 minute longer. Stir in the beans, tomatoes, broth and 1/2 cup water; bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes, stirring often and adding water as necessary.

China Plans to Launch an ‘Artificial Moon’ to Light Up the Night Sky

The night skies might soon have company: Chinese scientists are planning to launch an artificial moon into orbit by 2020 to illuminate city streets after dark.

Scientists are hoping to hang the man-made moon above the city of Chengdu, the capital of China’s southwestern Sichuan province, according to a report in Chinese state media. The imitation celestial body — essentially an illuminated satellite — will bear a reflective coating to cast sunlight back to Earth, where it will supplement streetlights at night.
Scientists estimated that it could be eight times more luminous than the actual, original moon. It will also orbit much closer to Earth; about 500 km (310 miles) away, compared to the moon’s 380,000 km (236,000 miles).

But the ambitious plan still wouldn’t “light up the entire night sky,” Wu Chunfeng, chief of the Tian Fu New Area Science Society, told China Daily. “Its expected brightness, in the eyes of humans, is around one-fifth of normal streetlights.”
Wu estimated that new moons could save the city of Chengdu around 1.2 billion yuan ($173 million) in electricity costs annually, and could even assist first responders during blackouts and natural disasters. If the project proves successful, it could be joined by three more additions to the night sky in 2022, he said.
But much more testing needs to be done, Wu said, to ensure the plan is viable and will not have a detrimental effect on the natural environment.
“We will only conduct our tests in an uninhabited desert, so our light beams will not interfere with any people or Earth-based space observation equipment,” he told the Daily.
China’s space goals are not unprecedented. In the 1990s, Russia experimented with using an orbital mirror to reflect sunlight on some of its sun-deprived northern cities, according to the New York Times. The project was abandoned in 1999 after the mirror failed to unfold and was incinerated in the atmosphere.
In January, American firm Rocket Lab launched an artificial star into space, the Times reported. But scientists criticized the “Humanity Star,” as the reflective mini-satellite was dubbed, for contributing to artificial light pollution and cluttering in Earth’s orbit.

History

From 1874 to 1892, the house was the property of Andrew Borden, Lizzie’s father, who was a member of Fall River high society.[2] After Lizzie’s trial and acquittal of murdering her father and stepmother with an axe, Lizzie and her sister Emma did not return to the house. Instead, Lizzie bought another house located at 7 French Street that she named ‘Maplecroft’. Lizzie lived there until her death on June 1, 1927.[1] The house number of 92 Second Street was changed to 230 in 1896.[3]
Today
It has operated as a bed and breakfast since 1996 under the ownership of Martha McGinn who inherited the house. Martha’s grandparents purchased the house on August 4, 1948. According to Martha McGinn, the room where Lizzie’s stepmother Abby Borden was found murdered is the “most requested room” of the bedrooms at the bed and breakfast. The Fall River Historical Society promotes the Lizzie Borden bed and breakfast as a tourist attraction.

Paleo Halloween Ghost Truffles

Paleo Ghost Truffles (gluten, grain, dairy free)

Ingredients
⅔ cup raw pecans, finely chopped
3 tablespoons cacao paste (or 100% dark, unsweetened chocolate), chopped
½ cup coconut butter, melted*
2 tablespoons raw honey
½ teaspoon vanilla extract
pinch of salt
½ cup shredded coconut, unsweetened
handful mini chocolate chips

Instructions

Melt the cacao paste slowly in a bowl over simmering water (double boiler).

Mix in the chopped pecans, 4 tablespoons of melted coconut butter (reserve the remaining ¼ cup for dipping), honey, vanilla extract and salt, until all ingredients are well combined.
Scoop 1 tablespoonful of dough onto a cookie sheet lined with parchment paper. Using your hands, shape each truffle into 1-inch balls. The batter will be slightly crumbly, so shape each truffle gently and set it on the pan.
Insert a lollipop stick into the center of each truffle and freeze for 20 minutes.
Dip chilled truffles, one at the time, in melted coconut butter, then roll in shredded coconut. Set truffles back on the parchment paper.
Press three chocolate chips into each truffle to create a cute face.

Skinny Crab Cakes/Recipe Share

Healthier Crab Cakes

Ingredients:

  • Crab Cake
  • 2 scallions, finely chopped
  • ¼ cup parsley, finely chopped
  • 1 tsp. minced garlic
  • 1 jalapeno pepper, seeded and minced
  • ½ tsp. paprika
  • ¼ tsp. freshly ground black pepper
  • ¼ tsp. sea salt
  • ½ cup whole wheat panko bread crumbs
  • ¼ cup egg whites
  • 1-pound canned, lump crab meat
  • Nonstick cooking spray
  • Dipping Sauce
  • ½ cup nonfat plain Greek yogurt
  • 1 tsp. Dijon mustard
  • 1 scallion, finely chopped
  • 1 Tbsp. lemon juice
  • Pinch of cayenne
  • Pinch of sea salt and freshly ground black pepper

Directions:

  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  2. In a medium bowl, thoroughly mix all crab cake ingredients except egg whites and crab meat. Fold in lump crab and egg whites, being careful to avoid breaking crab into small pieces.
  3. Scoop 2” diameter cakes onto the foil lined baking sheet (should make 10 crab cakes). Pat lightly and mist tops with cooking spray. Bake for 15 minutes or until the tops are lightly golden.
  4. While crab cakes are baking, whisk together dipping sauce ingredients in a small bowl.
  5. Serve 2 crab cakes with 2 tablespoons of the dipping sauce.

The Path
“I don’t like you going jogging all by yourself in the morning,” Evelyn said over coffee one morning.
“Mom, it’s fine,” Julie said. “Besides I like running when there are fewer people out. It’s just me and nature.”
Evelyn sighed and shook her head. Like father, like daughter. Frank liked going running in the mornings too. She just couldn’t stand the thought of losing Julie too.
The following morning, Julie tied her tennis shoes, patted Baxter’s head, and headed out the door for her morning jog. Mist floated just above the ground. Julie smiled and pulled out her phone to take a picture. She loved morning fog. It was so mysterious…so creepy…so alive.
As she started down the jogging path that wound between the tall pines of Horseman Hollow park, she …

felt happy and she was being salubrious.

She always enjoyed jogging. Often she would plug-in her earphones and listen to several songs she recorded on her MP3. This kept her mind clear of all the many difficult things in her daily life. It was always for a short time, of course, until she had to get back into the daily grind. For today she was going to make the most of her exercise. She was increasing her heart rate as she started jogging faster than her previous stride. She had heard if you slow down some and then speed up some you would be doing a lot more good than keeping at the same pace.

Sometimes, if she was honest with herself, she let things that she saw out of the corner of her eyes, scare her. This morning the fog was rather thick , thicker than she had seen this year. She couldn’t help but notice that things were especially odd this morning. Contrary to her usual morning jog, this morning seemed different. This path had the tallest pines in the area. The woods around the trail were so thick and crowded. If a person was to get off the trail, they would surely be lost. She imagined that if a person wanted to plan a murder, this would be the ideal place to come to. The danger of that thought gave rise to her curious nature and her fondness of the whole place.
