Okay,

This song takes me back to those years when I was young and it felt like every relationship was the last one and the only one. Ha, I am so glad that never was real for me, just saying.  But if you have not heard this song, take a listen. I really like the sound of their voices and the music is great too!

Now let me tell you,

This song is relevent to how some people actually feel. Seriously, this can be a real thing for some people. People who have a phobia or disorder, read below…this is just one of the explanations. I went to college and was taught in the mental  health field so I am using this song to spread awareness to this disorder and many others that people do not know about.

What is paranoid personality disorder?

Paranoid personality disorder (PPD) is a long-term, mental health condition. PPD causes you to be suspicious, distrusting, and hostile toward others. This is because you think they want to hurt you or take advantage of you. You may have trouble trusting or getting along with others. These thoughts and behaviors can cause problems with your relationships and daily activities.

What causes PPD?

The cause may not be known. Your risk for PPD is increased if you have a family history of the disorder. You are also at risk if you were abused or neglected as a child.

What are the symptoms of PPD?

You think other people will harm, trick, or take advantage of you

You think that your friends might not be loyal. You may think about how they have let you down. You may search for proof that they cannot be trusted.

You are nervous about talking to other people because you are afraid they will use the information against you.

You often hold grudges against people who you believe have done something bad to you. You believe that the actions were done to hurt you, and you cannot forgive the people who did them. You may see people as your enemies, and want to get back at them.

You think that others are trying to insult you. You may hear a person say one thing, but you think that they mean something else.

You suspect that your partner has been unfaithful.

You think that certain people are trying to make you look bad to others. You may react by getting angry or attacking them back. You may also believe that your reputation is being threatened.

You’ll never need to miss bread or breadcrumbs again. Here it goes:

Ingredients for low carb keto meatballs

(For ground beef + 5 large meatballs, it’s 1 net carb w/ 18g fat, 22g protein per meatball)

  • 1 lb ground beef (or 1/2lb beef, 1/2lb pork … or … (1/2lb beef, 1/2lb pork, 1/2lb lamb)
  • 1/2 cup grated parmesan cheese
  • 1 tbsp minced garlic (or paste)
  • 1/2 cup mozzarella cheese
  • 1 tsp freshly ground pepper

Mix it all together in a bowl and roll these babies up into meatballs. I decided to make big ones, so it made about 5 large meatballs.

You can cook them on the stove with some butter/oil/ghee but mine were pretty big so I browned them in an oven-safe pan and then put it in the oven at 400 degrees for about 20 minutes until they were cooked to 170 degrees.

When they were done, I added them to a pot of sauce I was cooking for a few minutes.

These were, by far, the most moist meatballs I’ve made on keto so far. The mozzarella really softens the whole joint up while adding flavor. From now on this is how I make meatballs!

I served them with yellow and green squash noodles, made almost exactly (no lemon) the same way as they were in my lemon cream squash ribbon pasta and garlic lemon squash pasta. They were topped with Rozzano Marinara, which I found at BJ’s and only has 2 net carbs per serving.

Onion & Chive Cauliflower Hashbrowns {Keto & Grain-Free}

Ingredients
  1. 2 cups riced cauliflower (about half of one large head of cauliflower)
  2. 1 large egg
  3. 1/4 tsp salt
  4. a couple cranks of fresh pepper
  5. 1 tbsp finely diced onion
  6. 1 tsp finely diced green pepper
  7. 1 tsp finely diced red pepper
  8. 1 small block of onion & chive Cotswold cheese
  9. 1/2 tbsp olive oil
Instructions
  1. In a bowl, combine cauliflower, egg, salt, pepper, onion, green pepper and red pepper until thoroughly combined (the egg will help everything stick together).
  2. In a small pan over medium-high heat, add olive oil.
  3. Once the pan is hot and olive oil rolls around easily in the pan, use a large spoon to scoop half the cauliflower mix into the pan. Use the spoon to flatten the cauliflower down to about 1/3 inch thick, and also to smooth around the side so that it’s in a round or rectangle shape.
  4. Let sit and cook until brown and crispy underneath, about 4-5 minutes.
  5. Use a spatula to flip the hashbrown.
  6. Using a cheese grater, grate a generous amount of the onion and chive cotswold cheese over the hashbrown.
  7. Let the hashbrown cook until crispy underneath (another 3-4 minutes) and until the cheese on top has melted.
  8. Remove from your pan with a spatula, and repeat with the second half of the “batter”.
  9. Enjoy!
Notes
  1. In my photo, I’ve sprinkled microgreens over the top, but you don’t need to unless you want to!

Cheesy Ranch Broccoli & Cauliflower Bake

1 16 oz bag frozen cauliflower

1 16 oz bag frozen broccoli

1 1/2 cups shredded sharp cheddar cheese

2-3 tablespoons dry ranch seasoning (depends on your taste, I LOVE ranch)

3 tablespoons butter

Thaw the cauliflower and broccoli. Preheat oven to 350. I like my veggies softer so I steam them in the microwave for about 5 minutes first (just place them in a bowl with a little water and cover, then microwave). Place butter in the bottom of a 9×13 baking pan and let melt in oven. Place the vegetables in the baking dish and sprinkle with the ranch seasoning. Cover with the cheese and bake 10-15 minute or until the cheese is completely melted. Very easy, simple and a good way to flavor the veggies for my low carbers out there.

Cinnamon Muffins – Vegan/Gluten Free

2 cups flour (almond flour)
2 tbsp ground flaxseed
2 tsp baking powder
1 tsp baking soda
½ tsp salt
¼ tsp nutmeg
½ tsp cinnamon
½ cup cane sugar/brown sugar
½ cup unsweetened applesauce
1 cup unsweetened almond breeze (cow’s milk is fine)
1 tsp vanilla extract

Cinnamon sugar mix:
2 tbsp sugar (cane/white/brown all work)
½ tsp cinnamon

Preheat 355 F.
You can use silicone or paper liners; or grease a 12 muffin pan.
In a large bowl combine flour, flaxseed, baking powder, baking soda, salt, nutmeg, and cinnamon. In medium bowl combine sugar, applesauce, milk, vanilla. Pour wet ingredients into dry ingredients and mix until combined. Pour muffin mix into liners until they are around ¾ full. Sprinkle cinnamon sugar mix over the top of the muffins.
Bake for 20-25 minutes or until skewer removes clean.

For the GF – you can use gluten free flour mix or pancake mix.
For regular muffins – use plain flour or whole-wheat.

Note: the mix is very thick. I spooned into the liners. If using paper, I recommend spraying with non-stick spray. Next time I will add cinnamon/sugar mixture to the bottom of the liner, add mix, then sprinkle sugar mix on top too.

Once there was a swallow, with wings of blue, hues of red and hints of green

I saw it once in real and in one of my dreams.

It was the most graceful bird I had ever seen.

Fluffing it’s wings as it stroked them to make presteen.

Stopping long enough to look at me

While I was enamored with the sight of what I did see.

It started pulling berries from a bush, I suppose to eat

When it spotted a cat ready to pounce at him, with its feet.

The cat jumped and the bird lost its hold

Oh my! How could that cat be so bold?

No more bird, and it’s joy to me it did bring

All that was left behind was a little wing

Laying in the grass below.

How could that cat be so low?

No more swallow with wings of blue, hues of red, with  hints of green.

Nothing left of that graceful bird, the one I had seen.

Phone Calls

There was such silence this morning. I could almost hear a pin drop. I sat there reading the latest magazine I had. Drinking my coffee. That is when my mind started drifting to a time when there was so much chatter, running through the house, and you could hardly hear yourself think. Those times were the simplest of times and filled with such busy exciting moments. I had three kids. They were my whole world and I stayed at home with them. I sis not know then what I definitely know now, that life changes so fast, things happen and one day you find yourself without all the joyous “firsts” and the excitement of taking care of your children.

Now, I found myself sitting alone in the kitchen. I was trying to fill the void of being without small children in my house, and for once I found myself wishing to go back to that chaotic blessing. Yep, the chaotic blessing of having a house filled with lots of love and lots of good times. I also longed for the times when things were fast paced and when I found myself running here and there just to take my children to their soccer games or their basketball games. The times when you left home thinking you were prepared for the trip yet found you had left something behind in all the hustle and bustle. Yep, those times.

Here lately I have been finding myself hopeful for the phone calls I look forward to from my , now grown and moved out kids. I run to the phone in anticipation hoping that one of the phone calls are one of them. I it not funny that we try to rush through our lives and we fail to see the future and what it could be? I seldom thought about them leaving home when they were young kids. I never really dwelt on the days of having no kids at home anymore and what would I be thinking or doing because of that. Simple  phone calls mean the world, now to me.

Crazy as that sounds, phone calls will to you too if you have kids. MwsR ❤
