Black-Eyed Peas with Bacon

Ingredients

  • 1 pound dried black-eyed peas
  • 1/2 pound bacon strips, cooked and crumbled
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Additional cooked and crumbled bacon, optional

Directions

  • Rinse and sort black-eyed peas. Place peas and bacon in a Dutch oven; add water to cover. Bring to a boil; boil 2 minutes. Remove from heat; let soak, covered, 1 hour. Do not drain.
  • In a skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in thyme.
  • Stir into pea mixture. Bring to a boil; reduce heat. Simmer, covered, 30-40 minutes or until peas are tender, stirring occasionally. Sprinkle with salt to taste. If desired, serve with additional crumbled bacon.

Slow Cooker Bacon & Chicken
Cook Time: 8 hours Yield: 4 servings Category: Entree Cuisine: American
Ingredients
5 chicken breasts
10 slices of bacon
2 tablespoons thyme (dried)
1 tablespoon oregano (dried)
1 tablespoon rosemary (dried)
5 tablespoons olive oil (2 tablespoons for the slow cooker and 3 tablespoons after cooking)
1 tablespoon salt

Instructions
Place all the ingredients into a slow cooker pot and mix together.
Cook on the low temperature setting for 8 hours.
Shred the meat and mix with 3 tablespoons of olive oil.

Ingredients
12 bacon strips, diced
1 loaf (1 pound) frozen bread dough, thawed
2 tablespoons olive oil, divided
1 cup shredded part-skim mozzarella cheese
1 envelope (1 ounce) ranch salad dressing mix
Directions
In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat.
Arrange pieces in a 9×5-in. oval on a parchment paper-lined baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled.
Bake at 350° for 40 minutes. Cover with foil; bake 15 minutes longer or until golden brown.

Pressure Cooker Cheddar Bacon Ale Dip

  • 18 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1-1/2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 cup beer or nonalcoholic beer
  • 1 pound bacon strips, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1/4 cup heavy whipping cream
  • 1 green onion, thinly sliced
  • Soft pretzel bites

Directions

  • In a greased 6-qt. electric pressure cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer; add bacon, reserving 2 tablespoons. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high, and set time for 5 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
  • Select saute setting, and adjust for normal heat. Stir in cheese and heavy cream. Cook and stir until mixture has thickened, 3-4 minutes. Transfer to serving dish. Sprinkle with onion and reserved bacon. Serve with pretzel bun bites.

  • To lighten this up, use reduced-fat cream cheese, light sour cream, half-and-half and reduced-fat shredded cheese. Serve with fresh celery and carrot sticks.

Bacon Apple Cinnamon Breakfast Frittata
Ingredients
• 1 slice of bacon, diced
• 1 medium apple, peeled, cored, and diced
• 1 tablespoon ghee or organic butter
• 3 large eggs
• 1/4 teaspoon cinnamon
• 1/4 teaspoon vanilla
• 1 teaspoon orange zest
• 2 tablespoons pure maple syrup

Directions
Preheat oven to 350 degrees F.
In an 8-inch oven-proof skillet, cook bacon over medium-high heat until almost crispy. Set bacon aside on a paper towel-lined plate.
Add ghee and apple to the skillet over medium heat and saute for about 5 minutes until the apples are tender.
In a small bowl, whisk eggs, cinnamon, vanilla, and orange zest. Pour into skillet over the apples. Sprinkle with cooked bacon. Swirl until eggs start to set. Pop the skillet into the oven for approximately an additional 3-5 minutes to allow the eggs to set on top.
While the egg mixture is in the oven, heat the maple syrup on medium-high in a small saucepan to allow the syrup to reduce.
Slide your frittata onto a plate and drizzle with maple syrup.

Bacon Topped Meat Loaf/Recipe Share

Ingredients
1/2 cup chili sauce
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped
1 cup shredded cheddar cheese
2/3 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
2 bacon strips, halved
Directions
In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13×9-in. baking dish. Top with bacon.
Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before cutting.
