Super Easy Parmesan Crusted Zucchini

This Super Easy Parmesan Crusted Zucchini takes about 2 minutes to prepare and 10 minutes to cook. It’s a brilliant, super quick vegetable side!

Ingredients

3 zucchinis

4 tsp extra virgin olive oil

2 tbsp grated parmesan cheese

1/4 cup panko breadcrumbs

Salt and pepper

Instructions

Preheat broiler on high with the shelf around 10 inches from the heat source.

Cut the zucchini in half lengthwise, then each half into 3 pieces lengthwise (so each zucchini is cut into 6 pieces).

Place zucchini on a tray, drizzle with 2 teaspoons of olive oil, salt, and pepper. Toss then line up on the tray so they are pressed up against each other.

Sprinkle with breadcrumbs first, then parmesan. Drizzle with remaining olive oil then broil for 10 minutes or until golden on top and the zucchini is tender crisp i.e. just cooked.

Serve immediately!

1 scoop egg white protein powder

2 tablespoons creamy peanut butter

1 teaspoon vanilla extract

10 drops stevia

1 cup ice cubess.

Instructions

Combine water, protein powder, peanut butter, vanilla and stevia in a vitamix

Puree on high speed until smooth

Blend in ice cubes

Just wanted to take a minute to write to everyone out there in the land of  the internet.

I hope everyone is doing well. I appreciate all your thoughts and comments and sharing of my award, RAKA, Random Act of Kindness. I am so pleased to see everyone doing it and thanking or mentioning those ways others have shown you their kindness or how you show your kindness, I think it just makes the whole world a good place to mention things that are positive and uplifting. We need more of that in our world, don’t we?

Anyhow, I am writing a lot. Some days that is all time-consuming and that is okay, but then other days I need a break. So I pre-schedule a lot of what I write just to help me out some.

Just wanted to say thank you to all my followers, I hope my site is beneficial in some way to you or you enjoy it. Thank you all.

One Pot Cheesy Chicken Broccoli and Rice Casserole *

One Pot Cheesy Chicken Broccoli and Rice Casserole *

Ingredients

1 tbsp olive oil
1 small onion chopped
2 chicken breasts cut into small cubes
1/4 tsp salt
1/4 tsp black pepper
4 cloves garlic minced
3/4 cup rice uncooked
10 oz cream of chicken soup (1 can)
3 cups chicken broth low sodium
2 cups broccoli florets
1 cup cheddar cheese
1 tbsp fresh parsley chopped

Directions

Heat the olive oil in a large skillet. Add chopped onion and cubed chicken. Cook on medium heat for a few minutes until the chicken starts to brown a bit. Season with salt and pepper to taste. Stir in garlic and cook for another 30 seconds until garlic gets aromatic.

Add the rice, cream of chicken soup and chicken broth. Start with 2 cups of chicken broth and if more is needed add more until rice is fully cooked. Bring to a boil, then reduce heat and cook over medium heat until the rice is fully cooked, stirring occasionally, should take about 15 minutes or so. Taste for seasoning and adjust as necessary.

Add the broccoli florets and half the cheese then continue cooking for 2 more minutes, until broccoli softens a bit. Sprinkle over the top with remaining cheese and place the skillet under the broiler for a couple more minutes, just until it melts and starts to brown a bit.

Cheesy Zucchini Bites

Cheesy Zucchini Bites
Ingredients:
5 medium zucchini, cut into slices
3 Tbsp. Cream Cheese
5 tablespoons grated Parmesan cheese
2 teaspoon dried basil
1/8 teaspoon pepper
1 pint cherry tomatoes, sliced in half
*An Optional Idea:
Replace 2 Tbsp. of Parmesan Cheese and 1 Tbsp. Cream Cheese with 3 ounces crumbled Blue Cheese (Feta Cheese could be used instead of Blue Cheese). You will still use the Parmesan Cheese for topping.
Directions:
-Cut zucchini into 3/4-inch slices. Using small spoon, scoop out the insides and discard, leaving the bottom intact.
-Place zucchini on an ungreased baking sheet.
-Combine the cream cheese, Parmesan cheese (set aside 2 Tbsp. for topping.), basil, and pepper. Top each with a tomato half (or two); sprinkle with the set-aside Parmesan cheese.
-Bake at 400°F until cheese is melted, 5-7 minutes. Serve warm.
Makes approximately 35 bites.

That was kind of depressing compared to the original “Somewhere Over The Rainbow”, that gives people everywhere a lot of hope. Telling people it is okay to dream, and that dreams do come true.

I might be doing this some with other songs. It was kind of fun.
