Hello Guys!

I was just going to do a follow-up on things that are going on with my page and with me, etc.

I just got back from my doctor’s appointment. I had my blood drawn which I am so used to since being a Diabetic. I hardly even notice the stick from the needle anymore.

20180919_1531117582116003367971126.jpgSee, I must have it taped for a bit, till it stops bleeding. This is to check my blood sugars for my A1C and all my other stats.


 

I have stayed pretty busy doing my webpage, producing posts, etc. I am not sure it all is getting seen though.

  • My question for you all out there, “Do I need to post different times in a single day, or do I need just one post per day, or am I doing it okay?”
  • My concerns are that I might not be reaching everyone that I want to , if I post more than a couple of things a day. I am a regular daily poster so I need to know from you guys.

Hey, 

How are you all doing? I hope you are well today and everyday.

So…

As you know I write poems. I have published 3 self published books, for those who do not already know. I started this blog originally to get the information of those books out into the public.

Well…

I since have added recipes, news information, personal information share, music information shares, and song videos and lyric shares, as well as various other things. 

I know it appears to some maybe, that I am all over the spectrum of things. I like being that way but I really feel the need to share things that other might enjoy. 

I wrote up the RAKA AWARD, for those who don’t know what that is, look it up. It is an award for random acts of kindness. Hope you will check my page out to see more.

I recently started sharing products that I use and like. I am not sure for how long I will do this sort of posts but I feel it is good , if a person finds something that they like and to share that with others. If you are like me, you appreciate the information.

I think so far, I have a good variety of things. I do not like to be boring or mundane. So far, I have loved seeing the positive feedback others give me, and I hope to continue in doing so.

Now…

I hope you know, you all matter. I hope you know there is no one quite like you.

I hope you each feel loved, accepted and cherished.

Pumpkin Chocolate Chip Cookies

INGREDIENTS

2 cups/256 grams all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

2 teaspoons cinnamon

¼ teaspoon nutmeg

¼ teaspoon allspice

½ cup/113 grams unsalted butter (1 stick), soft but cool

½ cup/4 ounces/113 grams cream cheese, cold and cut into 8 pieces

¾ cup/165 grams light brown sugar, packed

½ cup/101 grams granulated sugar

¾ cup/202 grams pumpkin purée

1 teaspoon vanilla extract

1 ¾ cups/303 grams chocolate chips

PREPARATION

Heat oven to 350 degrees, and line two baking sheets with parchment paper.

In a medium bowl, stir the flour, baking soda, salt and spices until well combined.

In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, cream cheese, brown sugar and granulated sugar. Beat on medium-high until light and fluffy, about 1 minute. Add the pumpkin purée and vanilla extract, and mix to combine.

Turn the mixer to low, and add the dry ingredients. Mix until a few streaks of flour remain. Remove the bowl from the mixer, add the chocolate chips and use a rubber spatula to fold the mixture until well combined.

Scoop the cookies onto prepared baking sheets using a 1-ounce (roughly 2 tablespoon) cookie scoop, 2 inches apart. Gently press the cookies with your fingertips to flatten them slightly. The batter is quite sticky, so you may occasionally have to rinse the cookie scoop and your fingers during this process.

Put the cookies in the oven, and bake, until they are slightly cracked on the surface and golden, and rotating the pans from top to bottom and front to back halfway through, 12 to 15 minutes.

Pumpkin Cream Cheese muffins/ recipe share

PUMPKIN CREAM CHEESE  MUFFINS

Makes 18 Muffins

INGREDIENTS:

1 3/4 cups all purpose flour

1 tablespoon pumpkin spice

1 teaspoon baking soda

1/2 teaspoon salt

1 (15 oz) can pumpkin (pure pumpkin puree)

1 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1/2 cup vegetable oil

1 tablespoon vanilla extract

 

8 oz cream cheese

1/4 cup granulated sugar

1 large egg yolk

2 teaspoons vanilla extract

DIRECTIONS:

Preheat oven to 375°F. Place paper baking cups into muffin pan. Set aside.

In a medium bowl, whisk flour, pumpkin spice, baking soda and salt until well combined. Set aside.

In large bowl, whisk together pumpkin, sugar and brown sugar.

Beat in eggs, vegetable oil and vanilla extract. Slowly whisk in the flour mixture, until there are no lumps. Fill muffin tins 3/4 full.

In a medium bowl, beat cream cheese until smooth. Add in sugar, egg yolk and vanilla extract and beat until well combined.

Top each muffin with about 1 tablespoon of cream cheese mixture and use a toothpick to swirl it into the batter. This will not look smooth, but it will bake up much prettier. (You can see exactly how I did this in the video above.)

Bake muffins for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
