One Pot Cheesy Chicken Broccoli and Rice Casserole *

Ingredients

1 tbsp olive oil
1 small onion chopped
2 chicken breasts cut into small cubes
1/4 tsp salt
1/4 tsp black pepper
4 cloves garlic minced
3/4 cup rice uncooked
10 oz cream of chicken soup (1 can)
3 cups chicken broth low sodium
2 cups broccoli florets
1 cup cheddar cheese
1 tbsp fresh parsley chopped

Directions

Heat the olive oil in a large skillet. Add chopped onion and cubed chicken. Cook on medium heat for a few minutes until the chicken starts to brown a bit. Season with salt and pepper to taste. Stir in garlic and cook for another 30 seconds until garlic gets aromatic.

Add the rice, cream of chicken soup and chicken broth. Start with 2 cups of chicken broth and if more is needed add more until rice is fully cooked. Bring to a boil, then reduce heat and cook over medium heat until the rice is fully cooked, stirring occasionally, should take about 15 minutes or so. Taste for seasoning and adjust as necessary.

Add the broccoli florets and half the cheese then continue cooking for 2 more minutes, until broccoli softens a bit. Sprinkle over the top with remaining cheese and place the skillet under the broiler for a couple more minutes, just until it melts and starts to brown a bit.

Song Share/Let It Be Me – Jerry Butler & Betty Everett – 1964.

Lyrics

I bless the day I found you
I want to stay around you
And so I beg you, let it be me

Don’t take this heaven from one
If you must cling to someone
Now and forever, let it be me

Each time we meet love
I find complete love
Without your sweet love what would life be

So never leave me lonely
Tell me you love me only
And that you’ll always let it be me

Each time we meet love
I find complete love
Without your sweet love what would life be

So never leave me lonely
Tell me you love me only
And that you’ll always, let it be me

Orange Groove

Down in the orange groove where the orange trees grow

Lived a little ole man who you need to know.

He can fix you up with oranges and such

And if he likes you, you are in luck.

You will be stocked in oranges galore

And if you ask him, he will send you some more.

Nothing bad about that orange groove place

Everyone who visits never leaves without a smile on their face.

To bee or not to bee,

I would give you money if you’d give your honey to me.

Jack Frost

In the winter, always comes, someone everyone expects. Jack Frost is certain to arrive on time, every time. You can see his magic in the crystals that cover the earth, he is a wizard at such things. He captures the plants and their leaves, no one gets past his ultimate reach. He keeps things from flourishing and living. Just imagine what would happen if he ruled the night.

He is afraid of our sun. The sun warms everything in its view, even changes them to. The frost from Jack Frost is no match for the sun. It is a good thing to. The sun would not be there and all things would pass away. I like jack Frost better when he comes in the day.

Ingredients
  1. 1 tbsp garlic infused olive oil
  2. 1 cup mozzarella cheese
  3. 1/2 cup asiago cheese (or just use 1.5 cups mozzarella)
  4. 1/3 cup tomato sauce (naturally low carb preferred, 3-4 net carbs or less)
  5. Grated parmesan cheese (to taste)
  6. Pizza/italian seasonings (to taste)
Instructions
  1. Heat a good non-stick pan (I used ceramic) up to medium heat and add the garlic oil.
  2. When the oil coats the pan and is shiny, add your mozzarella (it should start sizzling right away).
  3. Use a spatula to spread the cheese evenly and round the corners, like a pizza.
  4. Cook for about 3-5 minutes while it melts and starts to become dark around the edges.
  5. Once all the cheese has melted and it’s starting to brown, add the tomato sauce and spread around lightly with a spoon.
  6. Cook for another minute or so.
  7. Use a spatula and start sliding it around the edges of the pizza, and then underneath just to de-stick it from the pan, but not trying to lift it off the pan.
  8. Once the pizza is free from the pan, tip your pan and slide your pizza on to a foil-lined pan (you can use your spatula to guide it)
  9. Sprinkle your grated cheese and pizza seasonings.
  10. Let cool for about a minute.
  11. Cut into fours and enjoy!
