Have you heard of the Italian noodle, or pasta, Gnocchi? I never had till this past year. It was never something I had heard of or tried. I found it one day in the grocery store and decided to try my hand at cooking it. I also discovered that Olive Garden does a dish with chicken and gnocchi, almost like a chicken noodle soup, and it was one of my favorites. I never knew what I was actually eating until I looked it up on the internet. Now I can say with almost certainty that I love gnocchi. I think they are great. I found these recipes that I thought I would share. Hope you enjoy them.

Here is a link to some tasty recipes, if you are a carnivore, or a vegetarian. I myself have never thought of becoming a vegetarian, but there is so many cool recipes that vegetarians fix for themselves.

Mediterranean Sheet Pan Chicken/Recipe

Take your chicken dinner to exotic places with this easy recipe for Mediterranean sheet pan chicken, full of herbs and spices and a little feta cheese!
Ingredients
1 teaspoon cumin
2 teaspoons oregano
2 teaspoons sea salt
2 teaspoons dried thyme
1 teaspoon pepper
1/2 teaspoon cinnamon
1/3 cup olive oil, plus extra for drizzling
4 bone-in chicken breasts
1 lemon, cut in wedges
3 cups baby potatoes, cut in half or quarters depending on size
One sweet onion, sliced
1 pint cherry tomatoes, cut in halves
2 tablespoons capers
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Instructions
Preheat your oven to 400 and line a rimmed baking sheet with foil (nonstick if you’ve got it).
Combine cumin, oregano, salt, thyme, pepper and cinnamon in a medium bowl. Add the olive oil and stir until well combined.
Drizzle a little more olive oil on the baking sheet and put the chicken breast on the sheet, spacing them out. Rub them all generously with the spice paste, keeping a couple of spoonfuls of the paste back.
Stir the potatoes with the remaining spice paste and arrange them on the pan around the chicken. Add the sweet onion slices and the lemon wedges.
Roast your sheet pan chicken in the oven for about 30 minutes, until the potatoes are tender and the chicken is cooked through (if you are using an oven thermometer to measure done-ness, which I love to do, the chicken should be 165 degrees)
Sprinkle the tomatoes, capers, feta cheese and parsley over the chicken and veggies, drizzle on a little more olive oil and serve!
Notes
You can serve this one right out of the pan – just put it on a hot mat in the center of the table and let your lucky diners serve themselves!

Cheddar Bacon Balls/Recipe Share
Ingredients
- 51⁄3 oz. bacon
- 1 tbsp butter
- 51⁄3 oz. cream cheese
- 51⁄3 oz. cheddar cheese
- 2 oz. butter, at room temperature
- ½ tsp pepper (optional)
- ½ tsp chili flakes (optional)
Instructions
- Fry the bacon in butter until golden brown. Remove from the pan, and let cool completely on paper towels.
- Crumble or chop the bacon into small pieces and place in a medium-sized bowl.
- In a bigger bowl, mix the grease left over from frying the bacon with all the remaining ingredients by hand, or with an electric handmixer.
- Place the big bowl in the fridge for 15 minutes to set.
- Make 24 walnut-sized balls, using two spoons. Roll them in the crumbled bacon and serve.

Salt and pepper, to taste
Directions:
1. Preheat oven to 350 degrees F.
2. Spray a cooling rack with cooking spray, place it on a baking sheet and set aside.
3. Combine cheese and spices in a medium bowl.
4. Spray each zucchini fry with cooking spray, then dip into cheese and seasoning mixture.
5. Spread zucchini fries across cooling rack on baking sheet and bake until tender (about 15-20 minutes).
6. If you prefer your fries crispier, broil for an additional two minutes.
7. Serve immediately.

2. Eggplant Fries
Delicious meets healthy with these eggplant fries that are as simple to make as they are tasty!
3. Carrot Fries
Ingredients:
1 1/2 lbs. peeled carrots, sliced into fry-like strips
Zero-calorie cooking spray
1 Tbsp. fresh rosemary, minced
Salt and pepper, to taste
Directions:
1. Preheat oven to 425°F.
2. Spray carrots with cooking spray then toss with rosemary, salt and pepper.
3. Spread carrots a sprayed baking sheet and bake for about 20 minutes or until crispy, flipping frequently.

1 cup of carrot fries counts as 1 Vegetable
4. Sweet Potato Fries
Ingredients:
2 medium sized sweet potatoes
Zero-calorie cooking spray
Cinnamon
Directions:
1. Preheat oven to 450 degrees F.
2. Slice sweet potatoes into long, fry-like strips, spray with cooking spray then sprinkle with cinnamon or salt and pepper.
3. Bake until fries are tender (about 20 minutes). Turn fries occasionally.
5. String Bean Fries
Ingredients:
1 lb. fresh green beans, trimmed
Zero-calorie cooking spray
½ cup grated Parmesan cheese
½ tsp. garlic powder
Salt and pepper, to taste
Directions:
1. Preheat oven to 375° F. Line a baking sheet with foil and spray with cooking spray.
2. Mix together cheese, garlic powder, salt and pepper.
3. Spray green beans with cooking spray then dip them in cheese mixture or toss to coat.
4. Add green beans to baking sheet and bake until crisp (about 10 to 15 minutes).
5. Cool slightly before serving.
