Paleo Snowball Cookies

Ingredients
• Cookie Ingredients:
• 2/3 cup pecan halves
• 2/3 cup chopped, pitted dates
• 1 teaspoon vanilla
• 1/4 cup cassava flour
• 2 tablespoons ghee or butter, melted
• 1 teaspoon baking soda
• 1 large egg
• pinch of salt
• Chocolate Coating:
• 3.5 ounce 72% chocolate bar
• 1 tablespoon coconut oil
• 1 teaspoon honey
• Snowflake Layer:
• 1.5 cups unsweetened coconut flakes

Directions
Preheat oven to 350 degrees F.
Place pecans in a mini food processor. Pulse until flour-like. Add dates, vanilla, cassava flour, butter, baking soda, and egg. Pulse until a sticky dough.
Form 10, 1-tablespoon sized balls (I used this scoop). Place on a parchment paper-lined baking sheet.
Bake for 12 minutes. Transfer cookie balls to a cooling rack and let cool for 30 minutes.
In a double boiler (or just set a metal bowl atop a pot with 1-inch of water), melt the chocolate, coconut oil, and honey. Dip cooled cookies in the chocolate mixture.
Roll dipped cookies in the coconut. Set cookies aside on the cooling rack. Once completed, transfer the cookies to a parchment paper-lined lidded dish and refrigerate until ready to eat.

Sometimes faint and sometimes fleeting spies

When they enter your heart like a big surprise

Tears can’t erase the echos that only you can hear

When it’s from the one you hold so dear

Some say they know

Some say to listen, hurts their hearts so

The hardest part is they are unpredictable

The flash feelings are so incomprehensible

To feel  them surely will take courage

To keep wanting them as if to save them up in storage

Whispers of a person’s hearts company

They take root sometimes and resonate inside, you see

There is no reason or rhyme

Sometimes only lasting for a season, just like mine

Whispers of your heart, as well as your soul, and through all time

They can be yours and they will be mine.

Writing poetry without using your hand

Tragic end to a beautiful night.

Hey, 

How are you all doing? I hope you are well today and everyday.

So…

As you know I write poems. I have published 3 self published books, for those who do not already know. I started this blog originally to get the information of those books out into the public.

Well…

I since have added recipes, news information, personal information share, music information shares, and song videos and lyric shares, as well as various other things. 

I know it appears to some maybe, that I am all over the spectrum of things. I like being that way but I really feel the need to share things that other might enjoy. 

I wrote up the RAKA AWARD, for those who don’t know what that is, look it up. It is an award for random acts of kindness. Hope you will check my page out to see more.

I recently started sharing products that I use and like. I am not sure for how long I will do this sort of posts but I feel it is good , if a person finds something that they like and to share that with others. If you are like me, you appreciate the information.

I think so far, I have a good variety of things. I do not like to be boring or mundane. So far, I have loved seeing the positive feedback others give me, and I hope to continue in doing so.

Now…

I hope you know, you all matter. I hope you know there is no one quite like you.

I hope you each feel loved, accepted and cherished.

Mushroom Gouda Quiche/Recipe Share

Ingredients
1 sheet refrigerated pie pastry
4 large eggs
1 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups sliced fresh shiitake mushrooms (about 4 ounces)
1 cup shredded Gouda or Monterey Jack cheese
1 cup chopped arugula or fresh baby spinach
Directions
Preheat oven to 350°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling.
In a large bowl, whisk eggs, cream, salt and pepper until blended. Stir in remaining ingredients. Pour into pie shell.
Bake on a lower oven rack 30-35 minutes or until crust is golden brown and a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Freeze option: Cover and freeze unbaked quiche. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Place quiche on a baking sheet; cover edge loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean.

1 piece: 422 calories, 33g fat (18g saturated fat), 207mg cholesterol, 452mg sodium, 21g carbohydrate (4g sugars, 1g fiber), 12g protein.
