I use to think life was going to be kind to us no matter what. Haha, not true. On the contrary, it is not going to happen. Life is what we all make out of what we have been given, regardless of our wants.

Don’t be a DINGY, and believe that you will always have roses and Champagne, instead of sorrow or rain…we get both!

Salmon Poke Bowl/Recipe

Description
This easy salmon poke bowl recipe tells you all you need to know about how to make poke, the healthy and delicious traditional Hawaiian meal!

Ingredients
1/4 cup soy sauce
4 tablespoons sesame oil
Juice and zest from one lime
1 tablespoon rice vinegar
1/2 pound sushi grade salmon
1 cup cooked white or brown rice
1 teaspoon rice vinegar
1 avocado, peeled, pitted and cut into chunks
1 cup fresh pineapple, cut into chunks
1 small cucumber, peeled and either spiraled or cut into small dice
1 scallion, chopped
sesame seeds for garnish
Instructions
Combine the soy sauce, sesame oil, lime juice and zest and one tablespoon rice vinegar in a medium size mixing bowl. Cut the salmon into bite-sized chunks (discard any skin) and add to the bowl. Mix well, cover the bowl and let the salmon marinate in the fridge for at least one hour and up to 12.
When you are ready to make the bowls, stir one teaspoon of rice vinegar into the cooked rice and divide the rice among two bowls or soup dishes. Scoop the salmon out of the marinade and divide between the two bowls. Do the same with the pineapple, cucumber and avocado.
Sprinkle the bowls with the chopped scallion and sesame seeds, drizzle a little of the salmon marinade over the top and serve at once.

Diabetes, Not Defeat!

As I sit here drinking my coffee as I often do

I find myself thinking of you.

Hard to imagine my life before you came

Since you’ve been here my whole life has changed.

You came like a Lion ready to devour its prey

All I could do was just pray that day.

We have since been closer than almost any other thing.

It’s like we are wed without the wedding ring.

I can’t say I haven’t thought of just leaving you

But I thought by now there’d be a scientific break through.

When I am out and about on the town

You are there right beside me, and I frown.

If I exercise you have to be there making sure that I feel your prescence

Wish sometimes you’d be absent!

To feel what I once felt

To not worry about stretching my belt,

These things have become prominent to me

I wish for the day you would leave me.

If you left I probably would cry

But hey, that would be me saying goodbye.

Tears of joy people would say

That would be a phenominal day!

For now though it’s like a bad twin

You tell me how…I make the when,

I choose to acknowledge you

To understand and fight too.

Diabetes you rule but I tell you how

And without me you have no power now.

Sink or swim is the saying for this disease

Just don’t say “Defeated”, if you please.

Hello Everybody!

I am hoping everyone is faring well. I have been busy doing the usual things like…

Taking care of my cats, my two dogs and my grandkids as well as my kids and husband. I really would not trade those things for anything else, because that is all my life and the things I love the most.

Anyhow…

I hope that everybody is enjoying my webpage still. It seems I am getting more and more onlookers. I have had some come from the internet search , which makes me happy. If you have never tried looking yourself up, you should try it. It is amazing where you show up and what information s being shown about you. Kind of scary though, as well. You never know what kind of crazy people are looking in on you!

So…

I am trying to post daily, seems my three-month preparation has passed now and I am having to write ahead for months to come. That way I never miss posting. It is important, I think, to keep people engaged as well. Comment and message and like people’s writings. It can make all the difference to a person struggling to find a place within this and other communities. I have noticed that not many comment anymore, as they use to on my things. I guess that is just the nature of things. Cannot please everyone and I am not going to beg for anyone to do it. No one should ever have to pry a compliment or comment from this world audience. Just like everything else we do in this world, it is not always going to be noticed or appreciated, or welcomed by all who see. That is totally okay.
