Meow Meow
Meow Meow

I love my Meow Meow very much. He is the sweetest cat. Sometimes, he will press his head against mine to remind me he loves me too. He also loves to kiss me, and I enjoy that. He has brought me such great companionship and is a part of my family.

Me and My son

My son, who is my youngest child. He is still the same pretty eyed boy as in this picture. Although he is grown now and is 18, soon to be 19, he still has my heart.

Inky

This is Inky, he is my second oldest cat, and he is such a sweet boy. He constantly grabs my hands for me to rub on him. I can’t imagine my life without my Inky in it. He is and will always be precious.

This keto pepperoni pizza cauliflower casserole is easy and economical to make, and it tastes so good that even picky kids and husbands will be won over! Low carb, gluten free, nut free, egg free.

Ingredients
For the Puree
1 medium head of cauliflower
2 Tbsps. Heavy Cream
1 Tbsp. Butter
8 slices pepperoni
1/4 cup shredded mozzarella cheese
salt and pepper to taste
For the Casserole
12 slices pepperoni
1/2 cup shredded mozzarella cheese

Instructions
For the Puree
Clean and trim the cauliflower, breaking it into medium sized pieces.
Place in a microwave safe bowl with 2 Tbsp of cream and 1 Tbsp of butter.
Microwave, uncovered, on high for 10 minutes.
Stir to coat cauliflower with cream/butter mixture.
Microwave for another six minutes on high (or until tender.)
Remove from the microwave and put into a high speed blender or food processor along with the 8 slices of pepperoni and 1/4 cup mozzarella cheese.
Puree until smooth.
Season with salt and pepper to taste.
You can adjust the cream and butter to your preference for consistency.
For the Casserole
Spread the cauliflower puree into an 8 x 8 oven proof casserole dish.
Cover with 1/2 cup shredded mozzarella cheese, and layer with pepperoni.
Bake at 375 degrees (F) for about 20 minutes.
Alternatively you could microwave this for 5 minutes.
Serve hot.

Easy Korean Sticky Chicken Easy-Sticky-Korean-Chicken

Ingredients
Serves 4

1 lb / 453 gr chicken breasts, cut into large chunks
2 tablespoons honey
3 tablespoons gochujang (Korean chili paste)
3 tablespoons soy sauce (or coconut aminos)
1 teaspoon freshly grated ginger
2 garlic cloves, minced
1 tablespoon vegetable oil (I used grapeseed oil)
1 tablespoon sesame seeds
2 scallions, green part only, finely chopped

Directions

In a bowl combine honey, gochujang, oil, soy sauce, ginger, and garlic. Mix well until combined.
Place chicken chunks in a resealable bag (or a shallow dish) and pour marinade over it.
Seal the bag (or cover the dish) and let marinate in the refrigerator for at least 30 minutes (marinate overnight for fullest flavor). If you don’t have time to marinate, that’s okay; it just won’t be so deeply flavored.
Remove the chicken from the marinade and set aside.
Heat oil in a large pan over medium-high heat, when sizzling add chicken and cook for about 8 minutes, or until cooked through, stirring every now and then. Transfer to a plate and set aside.
Add the marinade in the same pan and cook for one minute, until the sauce begins to bubble.
Return the chicken to the pan and coat on all sides, cook for further 2 minutes until the sauce thickens and the chicken is caramelized.
Sprinkle with sesame seeds and stir one last time to coat evenly.
Transfer to a bowl and top with chopped scallions.
Serve immediately!

Abstract

Abstract Art

My daughter is very talented. She is quite good with her hands. Drawing has always been her best talent. So, here recently I have been after her to draw me an abstract heart themed picture. Hearts have always been my favorite shape. They carry sentimental meanings and significance to me. I have always used them in my special signature and my art.

The reason I asked her to make this abstract heart picture was in the hopes of using it in my 4th poetry book. My titles are themed along with heart in their titles.  It could easy look like a series when you look at their names .

She drew me one this evening , which was waiting on me when I arrived home. I noticed the different textures she created  and the different writings behind the pictures . She used tears in the paper that she used to layer with to create a nice texture. I am not sure what the category one would use to place her drawing in but it is a small characteristic of her. She is definitely a unique person and this simplifies that in a talented way .

Oh how I wish I could draw like her, yet sadly, I can’t . My talent is in expressive writing, poetry, as it is called. I love it and thought I would blog about it. I will definitely use it in my next book.
