Chocolate/Peanut Butter Freezer Fudge

Ingredients:

  • 1/2 cup peanut butter
  • 1/2 cup unsweetened vanilla almond milk
  • 1 packet Nutrisystem NutriChocolates
  • Zero-calorie cooking spray
  • One ice cube tray or baking sheet

Directions:

  1. Spray a small pot or sauce pan with zero-calorie cooking spray then bring to medium heat.
  2. Add peanut butter and stir until it begins to melt.
  3. Pour in almond milk and NutriChocolates and continue to stir until mixture becomes thick.
  4. Remove pot from heat and let cool completely. Hint: You can add to fridge for a minute or two to expedite the cooling process.
  5. Spray an ice cube tray or baking sheet with zero-calorie cooking spray. Scoop fudge mixture into nine ice cube slots or pour onto baking sheet in nine circular “patties.”
  6. Place ice cube tray or baking sheet in the freezer to allow fudge to set. When ready to enjoy, eat as is, or let sit on counter for a few minutes to thaw.

3 Ingredient Peanut Butter & Honey Cereal Bars

Prep Time: 10 minutes

Cook Time: 3 minutes

Ingredients (9 bars)

  • 1/2 cup crunchy natural peanut butter, well-stirred
  • 1/2 cup honey
  • 3 cups toasted whole grain oats cereal (I used Trader Joe’s O’s)

Instructions

Line an 8 x 8 inch square pan with parchment.

Combine peanut butter & honey in a large saucepan and set over medium heat. Heat until mixture just starts to simmer, about 2-3 minutes, stirring. Remove from heat and stir until mixture is well-combined.

Stir in cereal until evenly coated. Pour mixture into prepared pan, cover with parchment, and press firmly. (Edited to add: A pastry roller will help to firmly and evenly pack down the mixture so the bars hold their shape). Chill in the refrigerator for 1 hour. Cut into bars. Store individually wrapped in the refrigerator.

Sweet & Salty Peanut Butter Bites

Ingredients

  • 1/2 cup semisweet chocolate chips
  • 4 peanut butter cups (3/4 ounce each), chopped
  • 1-1/3 cups creamy peanut butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1/8 teaspoon salt
  • 4 cups Rice Krispies
  • 1 cup broken pretzels

Directions

  • Freeze chocolate chips and peanut butter cups until partially frozen, about 15 minutes. Meanwhile, in a 6-qt. stockpot, combine peanut butter, sugar, corn syrup and salt. Cook and stir over low heat until blended.
  • Remove from heat; stir in Rice Krispies and pretzels until coated. Let stand 5 minutes; gently fold in chocolate chips and peanut butter cups until just combined. Drop by tablespoonfuls onto waxed paper; let stand until set.
Nutrition Facts

1 cookie: 86 calories, 4g fat (1g saturated fat), 0 cholesterol, 67mg sodium, 13g carbohydrate (10g sugars, 0 fiber), 2g protein.

Keto Peanut Butter Cookies

INGREDIENTS:

1 egg

1 cup natural smooth peanut butter

1/2 teaspoon Stevia

1 teaspoon vanilla extract

DIRECTIONS:

Preheat oven to 350F

In a bowl, whisk the egg. Add in the stevia and vanilla, and whisk again

Stir in the peanut butter, stirring well. That’s it! That’s the dough! You can add anything else at this point (chocolate chips would be DIVINE) if you’d like

Measure out 1 teaspoon of cookie dough, and roll into a ball. Place onto a greased cookie sheet, and create a crosshatch pattern with the back of a fork. Repeat for the entire batch of dough

Bake for 12-13 minutes. They will be slightly underdone when coming out of the oven, but will harden up.
