This is my sweet boy, Poppy, formerly Popeye. He loves watching the birds and hummingbirds. He is beautiful and very loving.

He covers my head at night with his paws and his head. He sleeps like that.

Keto coconut porridge/Recipe

 

Ingredients
1 oz. butter or coconut oil
1 egg
1 tbsp. coconut flour
1 pinch ground psyllium husk powder
4 tbsp. coconut cream
1 pinch salt

Instructions
Add all ingredients to a non-stick saucepan. Mix well and place over low heat. Stir constantly until you achieve your desired texture.
Serve with coconut milk or cream. Top your porridge with a few fresh or frozen berries and enjoy!

Cucumber Vinegar Salad/Recipe

Ingredients
2 English cucumbers, thinly sliced
1/2 tablespoon salt
1/2 cup apple cider vinegar
1/4 cup water
2 tablespoon granulated sugar
1/2 teaspoon fresh chopped dill
1/2 red onion, thinly sliced

Instructions
Place cucumbers in serving dish. Sprinkle with salt. Cover and refrigerate for 2 hours. Pour off the liquid (do not rinse).
Meanwhile, combine vinegar, water, sugar and dill in a small saucepan. Warm over medium heat just until sugar is dissolved. Add onion to cucumbers. Pour vinegar mixture over cucumbers and onion. Toss to combine. Refrigerate over night.
Serve and enjoy!

To make this sinful chocolate cake,

Combine 1 package of chocolate cake mix, 1 package of sugar free instant chocolate pudding mix, 1 ¾ cups of water and 3 egg whites in a bowl.

Beat with a mixer on low speed for about 1 minute and on medium speed for about 2 minutes. Pour the mixture into a cake pan coated with cooking spray.

Bake at 350 degrees until cooked through. Top with low-fat instant whipped cream and strawberries, and enjoy!

Ingredients
¾ pound carrots (about 4), cut into 1-inch lengths

2 stalks celery, thinly sliced

1 small onion, chopped

¼ cup all-purpose flour

1½ pounds boneless, skinless chicken thighs (about 8)

½ teaspoon poultry seasoning, kosher salt, and black pepper

½ cup dry white wine

½ cup low-sodium chicken broth

6 Biscuits

1 cup frozen peas

½ cup heavy cream

How to Make It
Step 1
In a 4- to 6-quart slow cooker, toss together the carrots, celery, onion, and flour. Place the chicken on top and season with the poultry seasoning, 1 teaspoon salt, and ¼ teaspoon pepper. Add the wine and broth.
Step 2
Cover and cook until the chicken and vegetables are tender, on low for 5 to 6 hours or on high for 2 1⁄2 to 3 hours (this will shorten total cooking time).
Step 3
Thirty minutes before serving, prepare the Easy Drop Biscuits (if using).
Step 4
Ten minutes before serving, add the peas, cream, and ½ teaspoon salt to the chicken and stir to combine. Cover and cook until heated through, 5 to 10 minutes more.

Step 5
To serve, place the bottom halves of the biscuits in shallow bowls, then top with the chicken mixture and the remaining biscuit halves.

Latin Chicken Skillet with Black Beans

Description
You’re less than 30 minutes away from serving up a delicious, homemade chicken dinner with Latin flair! And with just a handful of ingredients and a single skillet, this Latin skillet is a perfect meal for busy weeknights.

Ingredients
2 tablespoons olive oil
1 package (about 5-6 pieces, 1 1/2 to 2 pounds total) chicken breast cutlets, pat dry
2 teaspoons adobo seasoning
2 cloves garlic, minced
1 shallot, thinly sliced
1 1/2 cups grape tomatoes, halved
1 (15.5-ounce) can black beans
Lime wedges, for garnish (optional)

Instructions
Heat oil over medium-high heat in a large skillet.
Season chicken with adobo seasoning, then fry until golden brown on the bottoms, about 3 minutes. Flip chicken over and add garlic and shallots, shaking the pan a bit so the garlic and shallots move toward the bottom of the pan. Continue to cook until fragrant, about 2 minutes.
Add tomatoes and cook for 3 minutes. Lower the heat to medium, add beans, and simmer until the beans are heated through and the chicken is fully cooked, about 5 minutes longer.
Serve chicken and black beans with lime wedges alongside, if desired
