One Bowl Chicken Souvlaki

Ingredients
4 cups shredded cooked chicken
2 large cucumbers, chopped
2 scallions, chopped
2 tablespoons capers
1 pint cherry tomatoes, halved
1/2 cup plain yogurt
1/2 cup crumbled feta
1 teaspoon oregano
Fresh ground black pepper
1/2 cup chopped parsley
Pita bread (you could also use naan bread)
Instructions
Combine chicken, cucumbers, scallions, capers and tomatoes in bowl.
Mix up feta and yogurt — you can do this by hand if you like chunkier dressing or in a food processor if you like it smooth. Mix in the oregano.
Pour dressing over chicken mixture and stir just to coat. Sprinkle with pepper and parsley and serve with pita bread.

Mediterranean Sheet Pan Chicken

Take your chicken dinner to exotic places with this easy recipe for Mediterranean sheet pan chicken, full of herbs and spices and a little feta cheese!

Ingredients
1 teaspoon cumin
2 teaspoons oregano
2 teaspoons sea salt
2 teaspoons dried thyme
1 teaspoon pepper
1/2 teaspoon cinnamon
1/3 cup olive oil, plus extra for drizzling
4 bone-in chicken breasts
1 lemon, cut in wedges
3 cups baby potatoes, cut in half or quarters depending on size
One sweet onion, sliced
1 pint cherry tomatoes, cut in halves
2 tablespoons capers
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Instructions
Preheat your oven to 400 and line a rimmed baking sheet with foil (nonstick if you’ve got it).
Combine cumin, oregano, salt, thyme, pepper and cinnamon in a medium bowl. Add the olive oil and stir until well combined.
Drizzle a little more olive oil on the baking sheet and put the chicken breast on the sheet, spacing them out. Rub them all generously with the spice paste, keeping a couple of spoonfuls of the paste back.
Stir the potatoes with the remaining spice paste and arrange them on the pan around the chicken. Add the sweet onion slices and the lemon wedges.
Roast your sheet pan chicken in the oven for about 30 minutes, until the potatoes are tender and the chicken is cooked through (if you are using an oven thermometer to measure done-ness, which I love to do, the chicken should be 165 degrees)
Sprinkle the tomatoes, capers, feta cheese and parsley over the chicken and veggies, drizzle on a little more olive oil and serve!
Notes
You can serve this one right out of the pan – just put it on a hot mat in the center of the table and let your lucky diners serve themselves!

Ingredients

0.6 lb of ground chicken (270 g)

1 Tablespoon finely chopped chives (3 g)

1 Tablespoon finely minced fresh ginger (5 g)

Salt and pepper, to taste

2 Tablespoons of olive oil (30 ml)

For the broth:

2.5 cups of chicken broth (600 ml)

2 star anise

1 teaspoon of fish sauce (5 ml)

2 sliced green onions (10 g)

5 slices of fresh ginger (5 g)

Instructions

Combine the ground chicken with the chives and ginger and season the mixture with salt and pepper.

Pour the chicken broth into a pan and add the star anise, fish sauce, and ginger slices.

Bring to a boil, then reduce to a simmer for 10-15 minutes.

Heat the olive oil in a pan and cook the chicken meatballs until browned on the

outside and sufficiently cooked on the inside.

Add the cooked meatballs into the bowls of broth and scatter over the green onions.

This Dorito casserole is loaded with chicken, cheese, and a whole bag of Nacho Cheese Doritos! Trash food at it’s finest, guys!

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, stir together the chicken, soup, sour cream, half of the cheddar, Ro*Tel, cumin, and chili powder.
  3. Crush the Doritos and add half of the to the bottom of a 9×13 baking dish. Top with the chicken mixture. Add the other half of the crushed Doritos over the top of the chicken.
  4. Sprinkle the remaining cheese on top and bake for 20 minutes.
  5. Remove from the oven and top with the pico de gallo.
  6. Serve hot.

Chicken Green Onion Balls/Recipe Share

Ingredients:
¼ lb (115 g) bacon (about 2 – 3 thick cut slices)
1 lb (454 g) ground chicken
½ cup (35 g) chopped green onion
1 tsp (2 g) ground sage
½ tsp garlic powder
MIX: Roughly chop the bacon slices and put them in the food processor. Process until the bacon resembles ground meat, but not so long that the bacon becomes a paste. Add the ground chicken, green onion, sage and garlic powder to the food processor. There should be plenty of salt in the mixture already, thanks to the bacon! Pulse until the meat mixture is just combined and you can see that the green onions are evenly distributed throughout.
SHAPE: Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper. Use a 2 tablespoon (30 ml) scoop to measure out 16 equal-size portions of the meat mixture and drop them onto the lined baking tray. Use your hands to roll each portion into a round mini meatball shape.
BAKE: Cook the burger bites for 20 minutes and rest them for 5 minutes on the baking tray before serving. These are great paired with either BBQ Sauce  or Creamy Green Onion Dressing

10 slices of bacon

Instructions
Place all the ingredients into a slow cooker pot and mix together.

2 lb.boneless skinless chicken breasts

1/2 onion, chopped

2 medium sweet potatoes, peeled and cut into small cubes

1 lb.brussels sprouts, trimmed and quartered

1 tsp.dried thyme

1/2 tsp.paprika

1/4 c.low-sodium chicken broth

6 c.cooked wild rice

1/2 c.dried cranberries

1/2 c.sliced almonds

 

Directions
  1. Preheat oven to 350o and grease a 9″-x-13″ baking dish with oil. In a large, deep skillet over medium-high heat, heat 1 tablespoon oil. Season chicken with salt and pepper. Add chicken to skillet and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then cut into 1″ pieces.
  2. Heat remaining tablespoon oil over medium heat. Add onion, sweet potatoes, and Brussels sprouts and season with thyme, paprika, salt, and pepper. Cook until softened, 5 minutes. Add broth, bring to a simmer, and cook, covered, 5 minutes.
  3. Stir in cooked rice, chicken, and cranberries. Transfer mixture to baking dish, top with almonds, and bake 20 minutes.
  4. Let cool 5 minutes before serving.

1 tbsp. extra-virgin olive oil
2 boneless skinless chicken breasts
kosher salt
Freshly ground black pepper
1 onion, chopped
1 tbsp. ground cumin
1 tbsp. chili powder
1 15-oz. can fire-roasted tomatoes
1 15-oz. can black beans, drained and rinsed
1 c. corn kernels, fresh, canned, or frozen
1 4-oz. can green chilis
3 c. Fritos
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Sliced green onions, for garnish
Directions
  1. Preheat oven to 350º. In a large oven-safe skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and no longer pink, 8 minutes per side. Transfer to a plate to let rest 5 minutes, then slice.
  2. Add onion to skillet and season with salt, cumin, and chili powder. Cook until soft, 6 minutes. Add tomatoes and stir until combined, then add black beans, corn, and green chilis.
  3. Return cooked diced chicken to skillet and stir to combine. Simmer until thick, 15 minutes.
  4. Transfer mixture to a large bowl and layer half the Fritos on the bottom of skillet. Top with the chicken mixture, then sprinkle with cheddar, Monterey Jack, and remaining Fritos.
  5. Bake until cheese is melted and bubbly, 10 minutes.

Garnish with green onions and serve.
