Ingredients
1 pound ground beef
1/2 chopped onion
3/4 cup barbecue sauce
Tabasco sauce to taste
1 large can refrigerated biscuits
2 cups shredded cheddar cheese
Instructions
Preheat oven to 375 and grease 9×13 baking dish.
Cook ground beef in a large skillet until it begins to brown, and then add onion. Cook until beef is fully browned. Stir in barbecue sauce and Tabasco.
Lay biscuits in single layer in the baking dish. Top with beef mixture. Sprinkle cheddar cheese evenly over all.
Bake until biscuits are cooked and cheese is melted, about 20 minutes. Let cool for about 5 minutes and then serve.

Instructions
Preheat the oven to 400°F (200°C). Chop onion, bell pepper and celery finely and fry in butter in a large frying pan until slightly soft. Season with salt and pepper.
Mix tuna, mayonnaise, parmesan cheese and chili flakes in a greased baking dish. Add fried vegetables and stir.
Bake for 15-20 minutes or until golden brown.
Serve with baby spinach and olive oil.

For salmon fish cakes –
- 3 cans of salmon (approx. 450 g), drained and flaked (or use salmon filets and cook them first)
- 2 Tablespoons of fresh dill (6 g), finely chopped
- 3 medium eggs, whisked
- 1/4 cup of coconut flour (28 g)
- 1/4 cup of shredded coconut (20 g)
- 1/4 cup of coconut oil (60 ml)
- Salt and pepper, to taste
For cooking the fish cakes –
- 2 Tablespoons of coconut oil (30 ml)
For creamy dill sauce –
- 1/4 cup of mayo (60 ml)
- 1/4 cup of coconut milk (60 ml) (from a room temperature can)
- 2 cloves of garlic (6 g), minced or finely diced
- 2 teaspoons of fresh dill (2 g), chopped
- Salt and pepper, to taste
Instructions
- In a small bowl, whisk to combine the dill sauce ingredients.
- In a large bowl, thoroughly combine the fish cake ingredients. Form the mixture into 8 patties.
- In a large skillet, melt 2 Tablespoons (30 ml) of coconut oil. In batches, carefully place patties in the oil. Cook until golden brown on one side and turn over and cook until golden brown, about 3 to 4 minutes per side.
- Serve the salmon patties with the creamy dill sauce.

Directions
- Use your veggie peeler to create long “noodles” with the cucumber.
- Take two noodles and overlap them to form one large noodle.
- Spread about 1 tablespoon of veggie dip on the cucumber slices then add 1/4 slice of turkey meat.
- Cut cucumber noodles in half then roll each half up.
- You shouldn’t need a toothpick to hold these together, but you can use them if you want!

Doritos Chicken Casserole
This Dorito casserole is loaded with chicken, cheese, and a whole bag of Nacho Cheese Doritos! Trash food at it’s finest, guys!
Ingredients
- 11 ounces Nacho Cheese Doritos
- 2 cups cooked shredded chicken
- 1 can cream of chicken soup or my homemade creamed soup substitute
- 1 cup sour cream
- 8 ounces grated cheddar
- 10 ounce Ro*Tel tomatoes and chiles 1 can
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup pico de gallo
Instructions

Preheat oven to 350 degrees.

In a medium bowl, stir together the chicken, soup, sour cream, half of the cheddar, Ro*Tel, cumin, and chili powder.

Crush the Doritos and add half of the to the bottom of a 9×13 baking dish. Top with the chicken mixture. Add the other half of the crushed Doritos over the top of the chicken.

Sprinkle the remaining cheese on top and bake for 20 minutes.

Remove from the oven and top with the pico de gallo.

Serve hot.
