Pork Picadillo Lettuce Wraps

Ingredients

  • 3 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 2 pork tenderloins (1 pound each)
  • 1 large onion, chopped
  • 1 small Granny Smith apple, peeled and chopped
  • 1 small sweet red pepper, chopped
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1/2 cup golden raisins
  • 1/2 cup chopped pimiento-stuffed olives
  • 24 Bibb or Boston lettuce leaves
  • 1/4 cup slivered almonds, toasted

Directions

  • Mix garlic and seasonings; rub over pork. Transfer to a 5-qt. slow cooker. Add onion, apple, sweet pepper and tomatoes. Cook, covered, on low 2-1/2 to 3 hours or until meat is tender.
  • Remove pork; cool slightly. Shred meat into bite-size pieces; return to slow cooker. Stir in raisins and olives; heat through. Serve in lettuce leaves; sprinkle with almonds.
Nutrition Facts

1 filled lettuce cup: 75 calories, 3g fat (1g saturated fat), 21mg cholesterol, 235mg sodium, 5g carbohydrate (3g sugars, 1g fiber), 8g protein.

5. Lifting weights is important for building and retaining muscle. Higher amounts of muscle will result in a higher metabolism.

Making small lifestyle changes and incorporating these tips into your routine can increase your metabolism.

Crustless Diabetic friendly Pumpkin Pie!!

Ingredients:

1 can of pureed pumpkin

2 eggs slightly beaten

1 1/2 tsp pumpkin spice

1/3 cup sugar or sugar sub that equals 1/3 c sugar

1 tsp vanilla

3/4 cup evaporated low fat milk

2 TBS honey

Directions:

Combine all ingredients in a bowl. Grease a springform pan pour ingredients into pan. Place pan on a cookie sheet lined with tinfoil bake at 350 for 45-50 minutes until middle is set. Allow to cool for three hours. 67 cal., 13 g carb. (with sugar sub)

I am a pool without  moving water

A cup with nothing left in it to drink

Separated, like an egg that cracked and is broken

A traveler, traveling back into life, again.

No refuge to be found for my battered mind

Makes me reflect on things from this life of mine.

 

I am a winter that’s cold wind blows

When the outside starts to freeze

Although I may not deserve it.

 

 

 

 

I am a storm that is strong and sporadic

Leaving parts of myself in all I touch.

With my touch comes many things

Could be some lightning, or a hurricane.

 

 

I am me,

Just who I am supposed to be.

Sometimes going through life blissfully

But sometimes failing, you see.

Part of making it, in existing

Having a real life, that is worth living.

Joy comes in the morning

I often heard this while I was growing up.

What on earth could it mean, I thought.

I think it could mean, joy comes after you have had a rough day.

To be able to wake up, with a different frame of mind. Maybe a new perspective, possibly another chance to change something.

I do not know for sure, guess I could Google it!

I do know though this, if you carry things that bother you to bed and those things are preying on your mind, you can’t really have a good morning, now can you?

So it is best to go to bed with a clear conscious, a satisfied heart, perhaps a grateful one. You will then awake with joy in your heart.

Joy that you are alive, your heart is mended, and your given another chance to do whatever you need or want to do.

In life it seems sometimes

There are cross overs between our present and our pasts.

We do what we have to just to make it through.

When there is doubt or fear, or even pain that’s when,

Looking for some comfort, closure, or something else

We  go back to where we once was in another time or place in our lives.

Either remembering the feelings, thoughts, or something

Taking comfort from them  and what they remind us of

It’s crazy but yet we do.

For us to move on we collect our memories

Before we can move on ahead or just get through.

Often blinded, we are by the once before

The “what abouts”

Too much of that can shade our todays.

But if you have to or just because…

Then go ahead

Collect those memories from your head

Perhaps,  even expressing those feelings the best ways you can.

Like you could write them down by hand,

Make a mental note for yourself

Just don’t linger too long or take up residence there,

So you can finish your task at hand or to just keep living.
