Type 1 Diabetes

Millions of people around the world live with diabetes or know someone living with diabetes.

The majority have type 2 diabetes, but an important minority have type 1 diabetes (~5%). Contrary to popular belief, type 1 diabetes is not a childhood disease.

It occurs at every age, in people of every race, and of every shape and size. In fact, there are more adults who have type 1 diabetes than children, although it was previously known as juvenile diabetes.
In type 1 diabetes, the body does not produce insulin.

The body breaks down the carbohydrates you eat into blood glucose (also called blood sugar), which it uses for energy.

Insulin is a hormone that the body needs to get glucose from the bloodstream into the cells of the body.

With the help of insulin therapy and other treatments, even young children can learn to manage their condition and live long, healthy lives.

Avocado Toast Pizza

avocado toast pizza

Ingredients
1 batch of pizza dough (see note)
2 tablespoons olive oil
3-4 avocados, peeled and pitted
Juice and zest from one lemon
Salt and pepper
1 pint cherry tomatoes, cut into quarters
1 cup crumbled goat or feta cheese, your choice!
Honey (optional but so good!)
Instructions
Preheat oven to 500 degrees (yes, 500!) and grease a 12 inch cast iron or other oven-safe skillet with olive oil.
While the oven is preheating, roll the pizza dough out into a roughly 13 inch circle and press it into the skillet, making a little crust along the edges by turning the edge of the dough over. Put the skillet on the stovetop and cook over medium high heat until the bottom is browned, about 5 minutes.
Transfer the skillet to the oven and bake until the top is browned, about 7-10 minutes. Remove from the oven and let the crust cool a little in the pan while you make the topping.
Scoop out the avocado insides on to a cutting board or large plate and smoosh with a potato masher or fork until it is as smooth as you like – we love a few chunks! Pour the lemon juice over the top and mix. Sprinkle on a pinch of salt and pepper and mix again.
Carefully transfer the cooked pizza crust onto a cutting board and spread the avocado mixture over the top. Sprinkle on the chopped tomato, cheese and lemon zest. Grind a little more pepper on top. And if you REALLY want to go crazy, drizzle a teeny bit of honey over everything (the whole sweet and salty thing is delectable!).
Cut into wedges and serve!
Notes
You can absolutely make this recipe with the pre-made pizza dough in the refrigerated section of your supermarket, but if you want to make your own dough, Roberta’s Pizza Dough is the best recipe I know – click here to see how to make it!

Poem/ What I know

What I Know(Diabetic’s thoughts)

By MwsR
It just takes one bite

And my sugar stays high all night.

One can of a regular coke

And feeling tired afterwards is no joke.

Wanting to overeat

But knowing inside it will make my bloodsugars peak.

At birthday parties passing up on the cake,

Because you hate that “sugar high” headache.

Feeling tired all day long

The food you ate and what kind was all wrong.

Wanting to get in shape

Exercising only with enough calorie intake.

Going out on the town to a favorite food place

Catching the frown you’re given from your loved one’s face.

Being told “You know that is wrong to do”,

But asking them ,”And just who the heck are you?”

It’s never not thought about

Never easy without a doubt.

Diabetes is a complication and disease

But doesn’t have to bring you to your knees.

Take control, take back your life.

Make it count regardless of any strife.
