Ingredients

Strawberry Fluff

  • 8 oz. cream cheese slightly softened
  • ½ cup heavy cream
  • ¼ cup Sukrin Icing
  • 1 tsp. vanilla extract
  • 1 tsp. lemon zest
  • 3 tsp. Sukrin Strawberry Jam No Sugar Added

To Serve

  • Sukrin Strawberry Jam No Sugar Added
  • Homemade whipped cream

Instructions

  • In a large bowl combine cream cheese, heavy cream, Sukrin icing, vanilla extract, and lemon zest. Mix with a stand or hand mixer until smooth and creamy.
  • Stir in Sukrin Strawberry Jam.
  • Pipe into a serving dish, layering strawberry fluff mixture, Sukrin Strawberry Jam, and homemade whipped cream.

Have you ever thought about growing you own supply of juicy, healthy strawberries? It’s so much fun and oh, so easy if you know the basics! Read along and I’ll give you some simple and easy tips for strawberry plant care so you enjoy your delicious strawberries all summer long!

Before growing strawberry plants you need to know there are three types of strawberries: spring bearing which produces fruit in spring, June bearing which will give fruit in early summer and everbearing, providing fruit all summer long. I chose the spring and everbearing ones so I could enjoy my strawberries from spring to end of summer.

When planning for strawberry care, bear in mind the spring and June plants will grow daughters also known as runners (which will form new plants and will expand rapidly). So when making your strategy for strawberry plant care, make sure you leave plenty of room between plants, for the daughters to roam around freely. Allow about 20-30″ between plants on each row and about 3 feet between rows. On the other hand, the ever bearing plants won’t grow daughters so you won’t need that much space for these. They’ll grow bigger strawberries though so don’t plant too close either, strawberries need light and sun to grow healthy and strong.close

how to care for strawberries
  • Strawberries need at least 6 hours of sun every day so before planting them, make sure the spot you choose gets plenty of full sun.
  • They’ll also need good drainage so you may need to add some sand to your soil if it’s too heavy in clay or even plant strawberries in a raised bed.
  • Plant strawberries very early in spring, as soon as the ground is workable. I planted mine first week of March.
  • Plant when the sun is not too strong, preferably in the morning, late morning on cooler days.
  • Leave enough room for plants to grow and for daughters/runners to spread.
  • Dig a small hole that barely fits the root, about 2/3. Lightly cover roots with dirt.
  • Apply some organic fertilizer right after planting and water plants to give them a jump start.
  • During hot summer days, water 3 times a week, preferably early in the morning and apply organic fertilizer every 2 weeks. Spreading some mulch around the roots will help retain moisture.
  • Pinch blossoms and runners in the first year to encourage the plant to grow stronger and supply more fruit.
  • When the runners (daughters) start growing, pinch them out and plant on other spots if you want to expand your strawberry patch but would like to keep it tidy.
  • If you don’t want the runners to spread, cover the soil around and between plants in foil, then spread mulch. This will also help control weeds.
  • Pick weeds regularly, preferably when the soil is moist.
  • Surround your patch with a fence if your bushes produce daughters; left alone, strawberries tend to spread rapidly and are hard to control once they took over other parts of the garden.

Strawberry Pretzel Pie

Ingredients

  • 4 cups miniature pretzels
  • 6 tablespoons butter, melted
  • 1/4 cup sugar
  • 3/4 cup boiling water
  • 1 package (6 ounces) strawberry gelatin
  • 1/4 cup lemon juice
  • 1 pound fresh strawberries, divided
  • 2 cups heavy whipping cream, divided
  • 1 jar (7 ounces) marshmallow creme
  • 2/3 cup whipped cream cheese
  • 2/3 cup sweetened condensed milk

Directions

  • Place pretzels in a food processor; pulse until chopped. Add butter and sugar; pulse until combined. Reserve 1/3 cup pretzel mixture for topping. Press remaining mixture onto bottom of a greased 9-in. springform pan. Refrigerate 30 minutes.
  • Meanwhile, in a bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Stir in lemon juice. Refrigerate 30 minutes, stirring occasionally.
  • Chop half the strawberries; hull the remaining berries and reserve for topping. In a large bowl, beat 1 cup heavy cream until stiff peaks form. Beat marshmallow cream, cream cheese and sweetened condensed milk into cooled gelatin mixture until blended. Gently fold in chopped strawberries and whipped cream. Pour into crust.
  • Refrigerate, covered, until firm, 4-6 hours. Beat remaining 1 cup heavy cream until stiff peaks form; spread over pie. Top with reserved strawberries and pretzel mixture.

1 piece: 350 calories, 19g fat (12g saturated fat), 56mg cholesterol, 284mg sodium, 39g carbohydrate (30g sugars, 1g fiber), 4g protein.

Unbaked Strawberry Keto Muffin

If you love fresh strawberries, this unbaked strawberry keto muffin dessert is a small but extremely filling morsel of sweetness that will curb any dessert cravings.


Ingredients

  • 1 oz. cream cheese
  • 1 tbsp unsalted butter
  • 1 tbsp Stevia Blend + 1 tbsp hot water, mixed (or 2 tbsp sugar-free vanilla syrup)
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut flour
  • 2 tbsp almond flour
  • 3 chopped strawberries

Instructions

  1. In a mug, melt cream cheese and butter in the microwave (or in a saucepan if you prefer).
  2. Add Steviva Blend, hot water, and vanilla extract and mix.
  3. Add the coconut flour and almond flour and mix again.
  4. Finally, add in chopped strawberries and mix into a dough, then enjoy!

Grilled Chicken with Strawberry Salsa/Recipe Share

Grilled Chicken with Strawberry Salsa

Ingredients
• 1/2 cup diced strawberries
• juice of 1/4 lime (you will use the remaining lime later in the recipe)
• 1 Roma tomato, seeded and diced
• 1/8 cup finely diced red onion
• 1/2 avocado, diced
• 1 small handful of chopped cilantro leaves
• sea salt and ground pepper, to taste
• 1 pound chicken tenders (or you can buy the breasts and slice it into long strips)

Directions
In a small bowl, combine strawberries, lime juice, tomatoes, onion, avocado, and cilantro. Stir to distribute the lime juice (this will help keep your avocado from browning). Season with salt, a pinch or two. Taste as you go so it is perfect for your taste buds!
Squeeze remaining lime over the chicken and then season with salt and pepper. Place tenders on a heated grill or grilling pan (medium to medium-high heat). Depending on the thickness of your chicken, you are going to cook them for 3-5 minutes per side. Check the internal temp with a meat thermometer to make sure the chicken is at 165 degrees. Remove from heat and let rest for a few minutes.
Spoon salsa over chicken. Serve immediately.
