Pumpkin Spice Fat Bombs/Keto/Recipe Share

Pumpkin Spice Fat Bombs
Servings: 24 bombs
Ingredients
  • 1/2 cup 1 stick butter – softened
  • 1/3 cup full-fat cream cheese – softened
  • 1/2 cup pumpkin
  • 2 packets Stevia sweetener
  • 1/2 Tablespoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
Instructions
  1. Add the softened butter and cream cheese to a large mixing bowl. Microwave for 20 to 30 seconds and stir to blend well.
  2. Add the rest of the ingredients and stir until well incorporated.
  3. Pour into your favorite mold or you can use small cupcake liners.
  4. Freeze for at least 4 hours before serving.
  5. *Store in an airtight container in the freezer. Thaw a few minutes before enjoying.

Fat Bomb, Sea Salted Chocolate/Keto

Sea Salted Chocolate Fat Bombs

A deliciously, yet lightly sweet and salty fat bomb option for people following a low carb lifestyle.

Ingredients

  • 1/2 cup Heavy Whipping Cream
  • 1 teaspoon Vanilla
  • 1/2 cup Coconut Oil
  • 1/2 cup Sunflower Butter
  • 2 tablespoons Cocoa Powder
  • 1/3 cup Cream Cheese
  • 1 teaspoon Cinnamon
  • 3 tablespoons Grassfed Butter
  • 2 teaspoons Coarse Sea Salt

Optional

  • Your Favorite Sugar Substitute (I don’t use a sugar substitute. Once you’re used to not eating sugar, these are sweet enough without an additive.)

Note

These sea salted chocolate fat bombs are THE bomb and will help struggling ketos and low carb eaters with their dessert cravings.

Directions

 

Step 1
Whip heavy whipping cream until soft peaks form then add vanilla and fold in.
Step 2

Place sunbutter, coconut oil, butter, cinnamon, Cream Cheese, and cocoa powder into the bowl of a food processor and process until smooth.
Step 3

Gently fold sunbutter mixture into whipped cream until well combined.
Step 4

Pipe mixture into silicone molds then sprinkle with coarse sea salt & freeze 6-8 hours or overnight.

Buttery Chocolate Fudge/Keto/Recipe Share

Ingredients
  1. 3oz Baker’s unsweetened chocolate squares
  2. 2 tbsp ghee
  3. 1 tbsp coconut oil
  4. 2 tbsp butter
  5. 1/3 cup organic peanut butter (w/ no added sugars)
  6. 1 tbsp sugar free vanilla syrup (I used Torani’s)
  7. 1/3 cup sugar free maple syrup (I used Carey’s)
Instructions
  1. Melt all of the above in a double broiler
  2. Add to an 4×8 pan, lined with parchment paper
  3. Freeze
  4. Cut into pieces, and store in the refrigerator

Sunrise Sausage Enchiladas/ recipe share

  • 1 pound sausage
  • 2 tablespoons canola oil
  • 7 cups frozen shredded hash brown potatoes, thawed (20 ounces)
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 1 can (4 ounces) chopped green chilies
  • 2 cups shredded cheddar cheese, divided
  • 10 flour tortillas (6 inches)
  • 2 cans (10 ounces each) green enchilada sauce
  • OPTIONAL TOPPINGS:
  • Chopped red onion
  • Chopped sweet red pepper
  • Chopped fresh cilantro

Directions

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes. Remove from pan with a slotted spoon; discard drippings.
  • In same pan, heat oil over medium-high heat; saute potatoes until lightly browned, 8-10 minutes. Remove from heat; stir in seasonings, chilies, sausage and 1/2 cup cheese.
  • Place 1/2 cup filling on each tortilla; roll up and place in a greased 13×9-in. baking dish, seam side down. Top with sauce. Refrigerate, covered, several hours or overnight.
  • Preheat oven to 375°. Remove enchiladas from refrigerator while oven heats. Bake, covered, 30 minutes. Sprinkle with remaining cheese. Bake, uncovered, until lightly browned and heated through, 10-15 minutes. If desired, serve with toppings.

1 enchilada: 398 calories, 25g fat (9g saturated fat), 48mg cholesterol, 1116mg sodium, 30g carbohydrate (2g sugars, 2g fiber), 14g protein.

For some we fail to appreciate what we had, all we can do is long for those times back.
